This traditional Rice Kesari Bath is a must and should sweet dish served in wedding functions at coastal and malenadu regions of Karnataka. There is a variant called Zarda Pulav but rice grains are not sticky there and that pulav is a bit dry.

Ingredients

50 Minutes
3 servings
  1. 1/2 cupbasmati rice
  2. 1/2 cupjeera rice(optional)
  3. 3large cup or 1/2 kg ghee / clarified butter
  4. 3 cupssugar
  5. 4cashew/kaju, halves(optional)
  6. 15raisins
  7. 1/2 tspsaffron/kesar dipped in milk
  8. 4cloves/lavang, crushed
  9. water to just wet the sugar

  1. 1

    Pressure cook basmati rice or jeera rice(I have used half measurement each but jeera rice is optional). let it be 5- 6 whistles.Once the pressure releases naturally, open the lid. Smash the rice well. Keep it ready.

    Now in a large heavy bottomed kadai, add 1 cup of ghee. once it clears add sugar and rice. start stirring on a medium flame for 5 minutes.

    Once sugar melts and rice settles down, add saffron milk, crushed cloves and stir continuously. meanwhile, in a small pan add 1 tbsp ghee and fry raisins till they bulge. similarly, you can fry cashews.while you keep stirring the rice kesaribath, add the raisins and remaining cup of ghee.

    If you feel ghee is less, you can add more. more the ghee tastier.

    After 30 minutes or so rice starts thickening and ghee starts oozing out.
