Pressure cook basmati rice or jeera rice(I have used half measurement each but jeera rice is optional). let it be 5- 6 whistles.Once the pressure releases naturally, open the lid. Smash the rice well. Keep it ready.

Now in a large heavy bottomed kadai, add 1 cup of ghee. once it clears add sugar and rice. start stirring on a medium flame for 5 minutes.

Once sugar melts and rice settles down, add saffron milk, crushed cloves and stir continuously. meanwhile, in a small pan add 1 tbsp ghee and fry raisins till they bulge. similarly, you can fry cashews.while you keep stirring the rice kesaribath, add the raisins and remaining cup of ghee.

If you feel ghee is less, you can add more. more the ghee tastier.

After 30 minutes or so rice starts thickening and ghee starts oozing out.
