Ingredients

20-25 minutes
1 serving
  1. 1 bowlleftover rice
  2. 1 cupfinely chopped tomatoes
  3. 1boiled potato chopped
  4. 1/2 cupfinely chopped onions
  5. 2 tspPav bhaji masala
  6. 1 tspoil
  7. 1 tspbutter
  8. 1/4 tspGarlic paste
  9. 1/2 tspcummin seeds
  10. 1/4 tspturmeric powder
  11. 1/2 tspred chilli powder
  12. to tasteSalt
  13. as requiredChopped coriander leaves for garnishing

Steps

20-25 minutes
  1. 1

    Heat oil and butter in a pan. Add cumin seeds and fry them till they get brown.

  2. 2

    Add the finely chopped onions and saute till translucent.

  3. 3

    Add the garlic paste and saute till the raw aroma goes away.

  4. 4

    Then add the finely chopped tomatoes and let it cook for 2-3 minutes on medium flame till the tomatoes become soft.

  5. 5

    Add all the spices- turmeric powder, red chilli powder and pav bhaji masala. Mix well till the butter releases from the sides.

  6. 6

    Add the chopped potatoes. Sprinkle salt as required and stir.

  7. 7

    Add the leftover rice and gently mix the veggies with the rice.

  8. 8

    Garnish with coriander leaves. Serve hot with curd accompanied with papad.
