Whenever there is leftover rice I usually prefer to make tawa pulao as it's quick and easy to make.
Steps

Heat oil and butter in a pan. Add cumin seeds and fry them till they get brown.

Add the finely chopped onions and saute till translucent.

Add the garlic paste and saute till the raw aroma goes away.

Then add the finely chopped tomatoes and let it cook for 2-3 minutes on medium flame till the tomatoes become soft.

Add all the spices- turmeric powder, red chilli powder and pav bhaji masala. Mix well till the butter releases from the sides.

Add the chopped potatoes. Sprinkle salt as required and stir.

Add the leftover rice and gently mix the veggies with the rice.

Garnish with coriander leaves. Serve hot with curd accompanied with papad.
