Here is another overnight oats recipe. I didn't really talk about overnight oats in my previous post cos I was explaining why I am uploading my brunch recipes on this website. Anyway, one of the things I love fondly about being vegan (I was a vegan) is overnight oats. I literally came up with loads of concoctions for my overnight oats; red velvet cheesecake, triple chocolate, etc etc.

Although they are vegan and plant based, but they are not really healthy. Which is one of the many reasons why I stopped being a vegan. These are a couple of overnight oats recipes which, in my perspective, are healthy, vegan and plant-based. Anyway, I really hope you will give this recipe a try. What I adore about these overnight oats is you can prepare them the night before bed, get them on the go during next morning rush.

Ingredients

  1. 1/2 CupRolled Oats,
  2. Almond Milk, 1/4 Cup + More
  3. 1/4 CupCoconut Milk,
  4. 1/4 CupPeanut Butter Preferably Pic’s,
  5. 1 TSPPure Vanilla Extract,
  6. Maple Syrup Preferably Grade ‘A’, 1 TBSP Adjust To Preference
  7. 2Fresh Bananas,
  8. High Quality Dark Chocolate Preferably Valrhona, For Garnishing

Cooking Instructions

    Add oats, almond and coconut milk into a mug or mason jar.

    Add in peanut butter, vanilla and maple syrup.

    Add 1 banana into a bowl.

    Mash the banana with a fork.

    Transfer the mashed banana into the mug.

    Cover and chill in the fridge overnight.

    Next morning, add milk into the oats mixture to desired consistency.

    Stir to combine well.

    Garnish with the remaining thinly sliced banana.

    Lastly, grate chocolate over the top.

    Serve immediately.
