One Pan Chimichurri Flank Steak with Potatoes

Step 1 – Making the chimichurri sauce
The authentic way of making this sauce is chopping by hand and using a mortar and pestle. Mortal and pestle is used to smash the garlic and turning it into a fine paste. I used food processor to grind the garlic instead. For the herbs, I finely hand chopped a bunch of parsley, coriander and mint. And just used what I needed. My own touch was to add 2 toasted green chilli for a little kick and smokiness in the flavor. I hand chopped that too finely. - 2
Food processor can be used to chop them, but it will turn everything into a paste which I didn’t want. I wanted some wholesomeness in the sauce. The sauce is quite easy. Just mix chopped garlic, diced shallot, parsley, coriander, mint, olive oil, lemon juice, salt, pepper and sugar and that’s it. You need to rest the sauce for 2 hours to get the real flavor out.

Step 2 – Cutting the Flank steak
It’s very important to cut the steak across the grain into thin slices. Flank steak is extremely flavorful but it’s a tough cut. So the marination, length of marination and cutting the steak across the grain is very important.

Step 3 – Marinating the steak
Once cut marinate with the chimichurri sauce for atleast 2 hrs to overnight. The longer the better.

Step 3 – Cutting and seasoning the potatoes
Cut the potatoes and season them with salt, pepper, paprika, dried oregano, dried parsley flakes, dried basil. Drizzle a little bit of olive oil on top.

Step 4 – Cooking everything in one pan
Since it will be a one pan dish, start cooking the potatoes 20 mins before you cook the steak. The steak will only take 1 or 2 to cook. Heat a heavy bottom pan or cast iron skillet (which I used). Put the potatoes flat side down to create a golden crust. Cook for 5 mins. Add a little bit of water. The steam will cook the potatoes faster. Cover and cook for 8-10 mins. Do a knife test to check the doneness of the potatoes.

Once almost done, add butter, chopped garlic and diced shallot and cook for few minutes. Then remove the potatoes from the pan. Give the pan a quick wipe and heat on high heat. Add the sliced steaks and cook how you like it. Add the potatoes back in the pan. And its done. If you want, you can drizzle some of the chimichurri marinade on top of the cooked steaks. Enjoy !!!
