Melt the butter in room temperature the whisk in the egg very well. Add the salt and the flour slowly and make a beautiful dough. Leave it in the fridge. Here I found a very useful tip:

While that's in the fridge, peel your veggies sidewise so you the get peel on the top and "flesh" in the quiche. Measure the high of the sections so while baking they don't sink in. (Yeah not that easy 📐)

When all the peeling is done, whisk the cream cheese with salt, pepper and oregano. Chop the Trappist cheese into very small pieces....

Spray some oil on a cold cooking tray and spread the dough nicely. Make some holes with a fork so that while baking the steam doesn't deform it 😎

Spread the cream cheese evenly then sprinkle the Trappist cheese on it...

Start rolling the thin stripes of veggies from the center....with the colourful peel upwards. You MUST have lots of patience for this 🥵

Btw, I microwaved the veggies for 10-16 seconds for them to be a bit soft..

Bake it from below in a preheated oven of 200°c for 40-50 minutes depending on if a knife comes out dry or not from the crush...
I avoided baking from the top to keep the colours! - 9
Let it cool for 15 minutes before slicing! So that the cheese toughens up and holds everything together.
This was a full meal for me : carbs, protein, all these veggies 🤓
