Every time I make chicken rice, I remember my mother. She used to cook this dish on weekends because our whole family loved it. Even with a big pot, my siblings and I would finish it in no time!

Cut the chicken thighs into pieces and remove the skin. Marinate with the prepared seasonings. Dice the onion and set aside.

Once the chicken is well marinated, heat a pan and sauté the shallots. Add the chicken and stir well. When the chicken is browned, add the diced onion.

Cook the rice. Add the cooked rice to the pan with the chicken and stir to combine. The rice will turn yellow from the turmeric and look glossy from the oyster sauce, making it very fragrant and delicious. Serve the chicken rice with cucumber and kimchi.
