Cook the yuca in salted water, then cut it into pieces about the width of three fingers. If you prefer, you can mash the yuca.

Prepare the filling by mashing the cheese with the yellow pepper paste, pepper to taste, and a little salt (be careful, as the cheese is already salty). Make enough filling for the amount of yuca you have.

Slice the yuca pieces in half, remove the fibrous core, add some filling, and press the halves together firmly to seal.

Beat the egg whites until stiff peaks form, then add the yolks and season lightly.

Heat the oil well. Dip the stuffed yuca pieces in the egg mixture and fry until golden on all sides. Remove and drain on parchment paper to absorb excess oil. Serve hot with your choice of side.
