Ingredients

  • 1 cupwhite peas / safed matar, soaked overnight
  • 2 cupwater
  • 1/2 tspsalt
  • handfulpudina / mint
  • As required tamarind / imli
  • 1 podblack cardamom
  • 1/2 tsppepper
  • 1/2 tspcumin / jeera
  • 1 tspsaunf / fennel
  • 1/2 tspchaat masala
  • 1/2 tspaamchur / dry mango powder
  • 2 tbspwater
  • 1/4 tspsalt
  • 3 tspoil
  • 1/4 tspturmeric / haldi
  • 1/2 tspkashmiri red chilli powder / lal mirch powder
  • pinchhing / asafoetida
  • 1/4 tspcumin powder / jeera powder
  • 1/2 tspcoriander powder
  • 1 inchginger, finely chopped
  • 1/4 tspgaram masala
  • 1/2 tspchaat masala
  • 2 tbsponion, finely chopped
  • 2 tbsptomato, finely chopped
  • As needed coriander leaves, finely chopped
  • 1 inchginger, julienne
  • 1green chilli, slit
  • 1/4lemon, wedge
  • pinchchaat masala

Steps

  1. 1

    Firstly pressure cook white peas, water and salt.

  2. 2

    Now in a kadai heat oil and saute ginger.

  3. 3

    Further saute spices.

  4. 4

    Additionally add in pressure cooked white peas and mix well.

  5. 5

    Mash slightly for desired consistency.

  6. 6

    Now add in prepared jaljeera chutney and mix well.

  7. 7

    Boil for 5 minutes or more adjusting consistency.

  8. 8

    Garnish with onion, tomato, coriander leaves, ginger, green chilli, lemon and chaat masala.

  9. 9

    Finally, serve matar kulcha recipe with plain kulcha or naan.
