Nawabi Paneer Anda Curry(Veg)
(served with Suji Naan, peas & corn rice, Sauteed vegetables , cucumber raita, moong sprouts salad, barbecue sauce and roasted papad.)

This is my innovative dish. Nawabi Paneer veg Anda Curry is a main course dish using paneer and sweet corn which is cooked in rich and flavorful gravy prepared using onions, ginger, garlic, whole spices, curd & milk etc. It gets it's richness from nuts i.e. almonds, cashews and it's flavors from whole spices, rose petals water and kasuri methi. This paneer recipe can be served at parties, during a family gathering or on festivals. This mouth-watering gravy dish can be served with naan, roti, paratha, and rice.

Ingredients

4 servings
  1. For Nawabi Gravy
  2. 2 tbsppoppy seeds (Khas Khas)
  3. 10almonds (badam)
  4. 10cashews (kaju)
  5. 2 tbsp + 1 Tspclarified butter (ghee) + oil
  6. 1 tspcumin seeds (jeera)
  7. 2bay leaf (tej patta)
  8. 1 inch cinnamon stick (dalchini)
  9. 4 cloves(laung)
  10. 3green cardamom (chhoti elaichi)
  11. 2medium size onion
  12. 1 inch ginger
  13. 10-12garlic pods
  14. 1 cup +2 tbspmilk
  15. 1/2 cupcurd
  16. 1 tspblack pepper powder
  17. To tastesalt
  18. 15-20dry petals of rose
  19. 8-10saffron strands (Kesar),
  20. 1 tspdry fenugreek leaves (Kasuri methi)
  21. 1/2 tspsugar or as per taste
  22. 💐Ingredients For Paneer Anda💐:
  23. 400 gmcottage cheese (paneer)
  24. 2 tbspall purpose flour
  25. to tasteSalt
  26. 1 cupsweet corn kernels
  27. 1/2 cupbread crumbs
  28. 1/4 cupmilk
  29. As neededOil to deep fry

Cooking Instructions

    Instructions for Nawabi Gravy: Soak poppy seeds and 10 cashew and almonds each for 30 minutes. Drain water. Then add milk and grind in a mixer jar and make smooth paste. Keep it aside. Soak rose petals in water.

    Heat clarified butter (ghee). Add cumin seeds and let it crackle.

    Add bay leaf, cinnamon stick, cloves, green cardamoms. Cook till aromat. Add medium sized chopped onion. Stir and cook till onion gets turn translucent i.e. pinkish.

    Now add add garlic cloves and chopped ginger. Cook 1-2 minutes.

    Add poppy seeds, cashew, and almonds paste. Mix well and cook 2-3 minutes. Thereafter let the mixture cool down.

    Add mixture in a grinder jar and grind it. Grind to make a fine paste.

    Heat ghee in a pan. Add ground mixture. Stir and cook till it gets of light golden colour. Add curd (dahi).

    Mix and cook.
    Stir continuously till it’s thick. Add salt according to taste and black pepper powder.

    Now add milk. You can add water instead of milk. It's your choice. Mix and cook for 2-3 minutes.

    Add rose water and mix. Add sugar. Cover with lid and cook for 6-7 minutes. Finish off with fenugreek leaves. Then switch off gas.

    Instructions to make Paneer Anda:

    Take one dish and crumble paneer with the help of your palm. mash it for 5-10 minutes until it gets smooth dough. Add salt. Mix well. Keep it aside.

    Grind corns in mixer jar and make a paste. Add salt. Make small lemon size balls.

    Now take some portion of paneer. Flatten it on your palm. Place corn ball. Seal it's edges and form it in a egg shape.

    Heat oil in a kadhai. Meanwhile dip these balls in milk. Then roll it in bread crumbs. Again dip it in milk and roll it in bread crumbs.

    Place carefully paneer anda in hot oil. Deep fry on high flame until golden brown.

    Drain extra oil. And transfer on kitchen absorbent paper.

    Now cut these Paneer Anda in two pieces. Take serving bowl. Pour gravy in it. Place paneer Anda in gravy. Sprinkle saffron strands.

    Serve drooling nawabi paneer anda curry with naan, roti, or rice
