Cut cauliflower florets into small pieces. Cube potato.Dry roast and grind whole masalas. Store in a container. Make a paste of curd,charmagaz or melon seed,onion, ginger and garlic.Scrape coconut.Heat oil and fry cauliflower and potato separately in low flame till nearly done.Set aside.Remove excess oil.Add ghee and sprinkle half crushed whole garam masalas and 3-4 black pepper.When they crackle add masala paste and fry.Add scraped coconut.Fry.Then add the fried cauliflower and potato and toss.

Add milk and little water if needed. Add chopped green chillies, salt and sugar to taste,garam masala, black pepper powder,1 tsp dry roasted masala and cook till masala coats cauliflower. Garnish with chopped coriander. Serve hot with pulao, rice or any Indian flatbread.
