Ingredients

  • 200 gvegan butter
  • 300 gplain flour
  • 100 gcoconut sugar
  • 1 handfulpistachios
  • 1 teaspoonhot water
  • 1further teaspoon coconut sugar
  • 1tree 🌲 cutter

Steps

  1. 1

    Cream the butter and sugar together, sift the flour and bring together to form a ball. Refrigerate for 15 minutes.

    Crush the pistachios in a pestle and mortar.

    Gently roll your shortbread pastry and use your cutter to make tree shapes. Back in the oven at 180c for 18 minutes or until golden. This may vary depending on your brand if vegan butter.

    Mix 1 teaspoon of hot water and a tablespoon of sugar and stir until dissolved. Brush your biscuits very lightly to give a sticky coating and sprinkle with pistachios.
