Heat desi ghee.add all whole spices and asafoetida.cook till fragrance comes out from the spices. Add cashew nuts. Cook till they become light brown. Add sliced onions. Cook till onions become light brown. add 1 tsp ginger garlic paste. Cook till the raw smell of ginger garlic gone.

Now add all dry spices like salt, red chilli, turmeric powder, coriander powder.mix well. Now add chopped tomatoes. Cook for 1 min on medium flame. Now add chopped fresh mint and coriander leaves. Cook for few seconds. Now add 3 glasses water.

When water starts boiling. Add 1 tsp clarified butter, it's optional. Now add soaked and washed and drained rice. Cover it, turn the flame low. Cook till rice is cooked perfectly, it will take 15 mins to cook.Garnish with coriander and mint leaves. Drizzle some lemon juice. Serve hot
