Tagliatelle al ragú di salsiccia 🎄

I've posted a few ragú recipes. Maybe with slightly different ingredients or different pasta but it's NOT served with spaghetti here in Italy, I would like everyone to know that! However the rule of thumb is egg pasta like tagliatelle with a rich meat and tomato sauce. I've sometimes added porcini mushrooms or just used good quality mince. Cook it long and slow for a wonderful rich ragú. This is a classic dish usually served for Sunday lunch or special occasions like over the festivities 😀 🎄 #onerecipeonetree #pasta #Italian #ragú #dinner #mainmeal #Christmas

Ingredients

4 servings
  • 400 gegg tagliatelle
  • 200 gsausages, remove the meat from the skin
  • Chopped carrots onions and celery
  • Glug of red wine
  • Tinplum tomatoes
  • 300 mlstock - approx
  • to tasteSalt
  • Parmesan to serve
  • Olive oil

Steps

    Remove meat from skin. Fry veg in olive oil for a few minutes. Add sausage meat and brown. Add wine and let it evaporate

    Add tomatoes, break down with a spoon. Add about half the stock and simmer on low for about 2 hours. Stir and check ragú every 15 minutes or so. Add more stock as needed

    With about 20 minutes to go, bring a pot of salted water to the boil and cook pasta according to instructions, egg tagliatelle usually takes about 4-5 minutes. Drain pasta al dente and add to sauce. Mix well and serve with Parmesan 😀
