Here is the perfect basic recipe for making Bredele using an Alsatian cookie press.

Preheat the oven to 300°F (150°C) with a rack in the middle position.

In a bowl, mix together the flour, cornstarch, and baking powder, then set aside. (The baking powder will make the dough lighter, but too much will cause the designs to disappear during baking.)

In the bowl of a stand mixer, add the softened unsalted butter, powdered sugar, and vanilla sugar.

Add the fleur de sel and vanilla extract. Beat on high speed for 2 minutes, then add the egg yolk.

Scrape down the sides of the bowl to make sure the mixture is even, then beat for another minute on high speed.

Add the flour, cornstarch, and baking powder mixture.

Mix briefly on low speed just until the dough comes together. (Do not overmix.)

Shape the dough into logs and insert them into the cookie press.

Attach the disc of your choice, press the lever down fully to pack the dough. If a little dough comes out, remove it. Now you can start making the cookies.

Do NOT use parchment paper or grease the baking sheet. The surface needs to have some grip, or the cookies won't release properly. Use a metal baking sheet (directly on the metal) or a Silpat mat, as long as it's not too worn.

To make the cookies, place the press firmly on the baking sheet and press the handle down once. Lift the press and the cookie will stay on the sheet. That's it! Beautiful cookies in ten seconds!

Place a small teaspoon of your favorite jam in the center of each cookie.

Bake for 15 minutes. (If you placed the cookies directly on a metal baking sheet, baking time may be shorter—about 13 minutes in my oven.)

The cookies are very delicate when hot. Use a spatula to carefully transfer them to a wire rack. They will become crisp as they cool.
