Soak the smak rice in a bowl in 1 cup water for about 10 minutes. After 10 minutes, in a kadai bring about 1 cup fresh water to boil and add the soaked samak. Let it cook for about 3-4 minutes with the kadai covered with a lid on low flame.

Once the samak rice is cooked, let it cool down. Mix all the ingredients together.

Shape the mixture as you desire. Round, leaf or heart shaped. Once shaped, keep it for 10 minutes.

Heat oil in a kadai and deep fry these cutlets on high flame first then low flame till crisp and golden.

Remove them on a absorbent paper.

Sprinkle some chat masala on top along with tomato sauce. Serve immediately.

Tip samak rice doubles when soaked and almost triples when cooked.
