Combine all ingredients in a large mixing bowl.

Easier to combine dry ingredients then mix into wet.

Distribute batter to muffin tray and bake at 350F for 25-30 minutes. Leave in closed-off oven for 10 minutes, then take them out.

Let muffins cool and enjoy!

You can freeze these muffins to thaw and reheat for an easy and healthy breakfast!

I made some delicious muffins with vegetable oil and almond flour, and wanted to try making an oil-free version. They turned out fluffy, moist and very tasty. The almond flour gives the muffins a rich aroma and they smell amazing when just out of the oven. They were still tasty the next day when chilled. I eat these at work when I feel like having a snack.
