This is a Lebanese salad that I learnt from Masterchef Ashish Singh ji. I have used boiled quinoa along with other ingredients available at my home. It is a healthy and delicious salad which my family enjoyed very much. The dressing is such that it can be used for Indian street food "chaat".

Ingredients

  1. 1 cupfresh coriander leaves
  2. 1/2 cupchopped cucumber
  3. 1/4 cupchopped tomato
  4. 1/5 cupchopped capsicum
  5. 1/5 cuppomegranate seeds
  6. 1/3 cupboiled quinoa seeds
  7. 1small onion, chopped
  8. 8-9dried cranberries
  9. 1/2 tspfinely chopped garlic
  10. 2 tspmint leaves, crushed
  11. 1 tbsproasted peanuts
  12. For dressing:
  13. 1/3 cupextra virgin olive oil
  14. 1 tspmustard powder (homemade)
  15. 2 tbsphoney
  16. 1 tsptamarind paste
  17. 1/2 tspcumin powder, roasted
  18. 1 tbsplemon juice
  19. 1/3 tspsalt

    In a bowl take all the ingredients of dressing for salad and mix well. Keep aside.

    Mix all the ingredients of the salad in a mixing bowl. Add the dressing to the salad. Garnish with peanuts and pomegranate seeds.
