Here's another simple dish: lentils! At least once a week, this time with a green sauce—note, it's not pesto. I changed up the preparation a bit for variety and served it with fluffy rice and a little something extra. Ingredients

  1. As neededcooked lentils
  2. 1small onion, peeled, washed, and diced small
  3. 1-2 clovesgarlic, well crushed
  4. 1large potato or 2 medium potatoes, peeled, washed, and diced small
  5. 1little chicken, vegetable, or beef broth, or the cooking liquid from the lentils, just enough
  6. To taste: black pepper, salt, dried oregano, ground turmeric, MSG, and seasoning mix
  7. 1 tablespoonpaprika
  8. 1red bell pepper or any color bell pepper, washed and diced small
  9. For the green sauce:
  10. Well-washed spinach leaves and cilantro, blended with a little water or the lentil cooking liquid, set aside
  11. To serve:
  12. Fluffy rice, poached or fried egg, and bananas

Steps

  1. 1

    Soak the lentils overnight in water, or for at least 2 hours ahead of time.
    The next morning, cook your rice and set aside. Prepare all your ingredients so everything is ready and quick to assemble. About 2 hours before lunch, or earlier if you prefer, cook the lentils with bay leaves. When they're done, drain and set aside. Save the lentil cooking liquid.

    About 30 minutes before lunch, heat a little good-quality oil in a clean, dry pot. When hot, sauté the onions, then add the garlic. Gradually add all the seasonings, stirring until it forms a paste. Add the blended green sauce (spinach and cilantro), stir well, then add the diced potatoes.

    Cook until the potatoes are almost done, then add the cooked lentils and stir well. Finally, add the bell pepper. If needed, add a little more broth. Stir well and cook for 5 more minutes. Everything is ready.
    Meanwhile, plate the rice and lentils.

    Top with a fried or poached egg and bananas. I got lucky and had a double-yolk egg—sprinkle a pinch of salt, dried oregano, and black pepper on top. There you go, a super tasty dish—simple but special. Trust me, it'll disappear fast because it's so delicious.

Mi vida cambió enormemente cuando tuvimos que emigrar a otro Pais, por mucho tiempo estuvimos fuera, ahi sola con mi familia, es cuando por necesidad fuí aprendiendo poco a poco a cocinar y descubrir que ME GUSTABA MUCHO, estuve rodeada de muchas amistades de diferentes Paises que les gustaba cocinar y así fuí aprendiendo. Soy creativa, me gusta probar de todo, y ahora que estoy en mi Pais Perú, me encuentro fascinada, tenemos de todo, realmente somos muy bendecidos, hablando de Gastronómia Perú mi Pais, tiene todo, es maravilloso, ya no sufro buscando ingredientes😅 todo es fácil. Hoy les comparto cositas ricas y sencillas deseando que sea de su agrado. No trato de cambiar nada, sólo son nuevas VERSIONES respetando los ingredientes base.
