Hearty & Healthy Lentil Stew

Ingredients

8-10 servings
  1. 3 SticksCelery
  2. 3Large Carrots
  3. 2Medium Onions
  4. 2Large Leeks
  5. 2Medium Parsnips
  6. 1/2Swede
  7. 1Bulb Garlic (adjust according to preference, I LOVE garlic)
  8. 2Chicken or Vegetable Stock Cubes
  9. 4 pintswater
  10. 2 CupsRed Lentils
  11. 1 tspSalt (adjust according to own preference)

Cooking Instructions

    Chop all veg (rough chunks)

  2. 2

    Put into a slow cooker or crock pot

  3. 3

    Add Stock

  4. 4

    Stew until all veg is soft through (I usually cook mine in a large slow cooker, over night on a medium heat)

  5. 5

    Assess the amount of liquid that remains after the vegetables have cooked. It may be that you might need to add stock or reduce/add extra lentils.

    Add dry lentils and allow to cool further until lentils are soft and stew has a firmer mushy appearance.

    Serve in a bowl and enjoy the veggie goodness!
