What are you gonna do with the rest of that cauliflower? Your potatoes are starting to grow!

Use em! This dish will accompany any protein, or you can eat it by itself. Kinda has some Mexican notes; after my first bite, I thought this would be perfect in a burrito with some sour cream. Srsly.

Ingredients

  1. Potatoes; bite sized
  2. .5Cauliflower; bite sized
  3. .5onion; diced
  4. 1small knob of ginger; diced
  5. .5 tspcumin seeds
  6. .3 tspturmeric
  7. 1 pinchGarlic powder
  8. Lime
  9. 1small palm size chopped cilantro
  10. Oil

Cooking Instructions

  1. 1

Preheat the oven to 400F. Toss your cauliflower and potatoes in some oil and season w salt & pepper. Bake for 30mins.

  2. 2

Meanwhile, cook your onions and ginger in a pan with 2-3tbsp oil over med heat until very translucent; 10+ mins. A pinch of salt helps bring out the flavor. Let them tan a little, some brown edges, but not burned.

  3. 3

Add in your spices: cumin, turmeric, and garlic powder. Toast until they dance in the pan.

  4. 4

Oh yea! The potatoes & cauliflower must be done - add those to the pan and toss til the cauliflower tans from the turmeric.

  5. 5

Season!!! Salt is much needed. Squeeze in your lime; maybe like 1 whole lime? And a handful of chopped cilantro. MMM! Now tell me that wouldn’t taste good in a burrito? Enjoy :)

When I was younger, my Mom would make me her little sous chef. “Peel the shrimp, chop the onions, cut the vegetables!” When Grandma moved in, Mom stopped cooking and I continued to be the sous chef in the kitchen. Grandma is the cooking EXPERT. Here are my notes!
