Muli Bhaji Muthia

There are many different variation to the muthia. But this one made with muli is the traditional one. Others are methi muthia, palak-methi muthia, cabbage muthia, laukik muthia and so on. It is very healthy and filling snack. You can pack this into kid’s lunch box also. It tastes good if it is cold. So this is best snack to pack for picnic, take one ketchup bottle with it. And you will have healthy, yummy snack. It is obviously much better than having a bag of chips.

Combined the whole wheat flour, Coarse wheat flour, ginger chilli paste, Carom Seeds, Red chilli powder, turmeric Powder, salt, sugar, cooking soda, cooking oil and mix it well.

Add fresh curd, chopped radish leaves and Chopped radish root in it and add little bit of water and make soft dough.

Apply 1/4 tspn of oil on your hands and divide the mixture into small equal portions. Shape each portions into cylindrical roll approximately 6 inches length and 1 inches diameter.

Arrange all the rolls on greased sieve and steam in steamer for 10 minutes on high flame and 45 minutes on Medium flame. Turn of the flame.

Remove, cool it completely and cut into 1/2 inches slices and keep aside.

For the tempering heat oil in kadai, Add Asafoetida and mustard seeds, Sesame Seeds and red chilli powder and saute on a medium flame for 20 seconds. Add Muthia pieces and saute on a medium flame for 4 to 5 minutes or till they turn light brown in colour and crisp.

Serve Muli Bhaji Muthia with tea or chutney.
