Gather the kumquats, sugar, honey, and water.

Wash the kumquats thoroughly.

Cut each kumquat in half and remove the seeds.

Place the prepared kumquats in a pot.

Cover the kumquats with 1 1/2 cups sugar and add 1/2 cup water (optional). Bring to a boil over medium-low heat.

Once boiling and the sugar has fully dissolved, reduce to low heat and simmer.

Simmer for 1 1/2 hours until the kumquats become translucent.

Get the honey ready.

Add 2 tablespoons honey to the pot.

Continue simmering on low heat for about 30 more minutes, until the syrup thickens.
