Traditional Candied Kumquats

In my childhood memories, my parents would take us to Yilan, and my mother always bought kumquat cakes. To be honest, as kids, we didn’t like the sweet and slightly spicy flavor of kumquats with their tangy skins. As an adult, I’ve come to appreciate how kumquats can soothe the throat, and now I can’t get enough of them. Take some time to prepare the kumquats, simmer them slowly, and store them in the fridge. You can enjoy kumquat honey tea anytime.

Ingredients

120 minutes
Serves 4 servings
  • 14 ozkumquats (about 400 grams)
  • 1 1/2 cupssugar (about 300 grams)
  • 2 tablespoonshoney (about 30 grams)
  • 1/2 cupwater (about 120 ml)

Steps

120 minutes

    Gather the kumquats, sugar, honey, and water.

    Wash the kumquats thoroughly.

    Cut each kumquat in half and remove the seeds.

    Place the prepared kumquats in a pot.

    Cover the kumquats with 1 1/2 cups sugar and add 1/2 cup water (optional). Bring to a boil over medium-low heat.

    Once boiling and the sugar has fully dissolved, reduce to low heat and simmer.

    Simmer for 1 1/2 hours until the kumquats become translucent.

    Get the honey ready.

    Add 2 tablespoons honey to the pot.

    Continue simmering on low heat for about 30 more minutes, until the syrup thickens.

    The kumquats should look beautifully translucent and golden.

    Transfer to a clean jar, let cool, and store in the refrigerator. Enjoy by adding hot water to make kumquat honey tea anytime.

    [Tip]
    *You can skip the 1/2 cup water if you prefer. Just simmer slowly over low heat.
