Tofu & Enoki Clear Soup

Enoki can be replaced with Shiitake, Shimeji, Oyster Mushrooms OR other Asian mushrooms. You may wish to add some Eggs.

Ingredients

4 servings
  1. 4 cupsDashi Stock *See ‘Dashi Stock’ page
  2. 1 teaspoonSalt
  3. 1 tablespoonSoy Sauce
  4. 1/2-1 blockTofu *soft to medium soft type recommended
  5. 100-200 gEnoki
  6. 2Spring Onions *finely Chopped

Cooking Instructions

  1. 1

    Cut Tofu and Enoki into small pieces.

  2. 2

    Bring Dashi Stock to the boil in a large saucepan.
    *Note: Use about 2 teaspoons Dashi Powder for 4 cups Water OR according to the instruction on the package.

    Season with Salt and Soy Sauce. Then add Enoki and Tofu, bring back to the boil.

  4. 4

    Add chopped Spring Onion and enjoy.
