Have made Rock Drops once before - I didn't have a Kenwood Food Mixer then,have only had my Electrical Food Mixer and Blenders since 2019,just now in the Month of March 2020 did use my Dough Hook connection onto my Kenwood too mix the butter with the Flour and Baking Powder and then later too mix with the wet ingredients.

Ingredients

15 - 20 min
  1. 200g/7 oz/1 3/4 cups plain (all-purpose) flour
  2. 2 tspbaking powder
  3. 100g/3 1/2 oz/1/3 cup butter,cut into small pieces
  4. 75g/2 3/4 oz/1/3 cup demerara (brown crystal) sugar
  5. 100g/3 1/2 oz/1/2 cup sultanas (golden raisins)
  6. 25g/1 oz/2 tbsp glace' (candied) cherries,chopped finely
  7. 1egg,beaten
  8. 2 tbspmilk

Cooking Instructions

    Lightly grease a baking tray (cookie sheet).

    Sieve (strain) the flour and baking powder into a mixing bowl.Rub in the butter with your fingers until the mixture resembles breadcrumbs.

    Stir in the sugar,sultanas (golden raisins) and chopped glace' (candied) cherries.

    Add the beaten egg and the milk to the mixture and bring together to form a soft dough.

    Spoon 8 mounds of the mixture on to the baking tray (cookie sheet).Make sure they are spaced well apart as they will spread during cooking.

    Bake in a preheated oven,200 oC/400 oF/Gas Mark 6,for about 15 - 20 minutes until firm to the touch when pressed with a finger.

    Remove the rock drops from the baking tray (cookie sheet).Either serve piping hot from the oven or transfer to a wire rack and leave to cool before serving.
