Make a smooth batter out of all the ingredients mentioned by adding a little water at a time as required. Do not add all at once. The quantity of water depends on the quality of the Semolina. So use it accordingly. Keep aside well covered for about 20 minutes.

Meanwhile heat Oil on a low heat. Shape into Medu Vadas using your thumb for the dent in the centre. Wet your palms a little before you proceed. Slide them carefully into the hot Oil. Deep fry on a low to medium high heat only until crisp and golden brown in colour. Do not fry on a high heat. This is important to keep in mind. The inside may not cook well if you do so.

Serve them hot with any Chutney of your choice. Enjoy!
