Ingredients

  1. 1 tablespoonolive oil
  2. 1onion thinly sliced
  3. 3garlic cloves
  4. 8 ozmushrooms, sliced
  5. 2medium zucchini’s, sliced
  6. 1 (28 oz)can diced tomatoes with juices
  7. 1 teaspoondried oregano
  8. 1/2 teaspoonred pepper flakes
  9. 5 handfulsspinach
  10. 8 ozspaghetti

Cooking Instructions

    Cook the spaghetti in a separate pot.

    In a large skillet, heat oil on medium high, add mushrooms, zucchini, onion, garlic and spices, cook for about 10 minutes, or until mushrooms and zucchini are tender.

    Stir in tomatoes and cook until heated through, add spinach at the end, taste for seasoning.

    Serve veggies over spaghetti
