I'm from the South, but I have a deep love for Central and Northern Vietnamese cuisine. I've wanted to try this dish many times, but it's hard to find ingredients like shallots (củ nén) and Quang noodles near me. In the end, my love for food and cooking led me to travel over 20 km to Ba Hoa Market—partly to buy ingredients, and partly to satisfy my craving for Central Vietnamese dishes.

Wash and prepare all the ingredients. For the pork ribs, blanch them in boiling water for 3–4 minutes, then rinse with cold water before cooking.

Marinate each type of meat separately with the prepared seasonings for about 30 minutes before cooking.
- For pork: marinate with shallots, garlic, red onion (do NOT add turmeric). Season with 2 teaspoons fish sauce, 1 teaspoon salt, 2 teaspoons sugar, 1/2 teaspoon chicken bouillon powder, and a little MSG.
- For chicken: marinate with shallots, red onion, garlic, turmeric, and the same seasonings as above.
- For shrimp: marinate with shallots, red onion, garlic, turmeric, and the same seasonings as above, but do NOT add fish sauce. - 3
Heat peanut oil in a pan, then sauté shallots, turmeric, and garlic until fragrant. Add the pork ribs and stir-fry until browned, then add just enough broth to cover the meat. Bring to a boil and skim off any foam. When the broth starts boiling, add the chicken and cook until the chicken is tender.

Once the broth comes back to a boil, adjust the amount of water and season to taste for your family.

Sauté the shrimp until about 70% cooked, then add the shrimp to the pot once the meat is tender.

Add quail eggs and a little annatto oil for color to finish.

If you don't use coconut water, you can use regular water instead. Good luck!
