Ingredients

  1. 1.5Whole Chicken with Skin (Cut in Sections)
  2. 4Potatoes (Cut in Cubes)
  3. 1.25 TablespoonsSalt
  4. 1.5 TeaspoonGround Black Pepper
  5. 1 TeaspoonRosemary
  6. 1 TablespoonDried Oregano
  7. PinchCayenne or Paprika
  8. 7 ClovesGarlic (Freshly Minced)
  9. 0.5 CupFresh Lemon Juice
  10. 0.5 CupOlive Oil
  11. 2/3rd Cup Chicken Broth for Pan and Deglazing
  12. Freshly Chopped Oregano to Garnish

Cooking Instructions

  1. 1

    Grease the oven pan with butter. Put the Chicken with skin and the potatoes into the pan.

    Marinate the Chicken with Salt, Black Pepper, Rosemary, Dried Oregano, Cayenne Pepper, Garlic, Fresh Lemon Juice, Olive Oil and Butter.

    Roast for about 45 minutes at 425° or until chicken is cooked through and well browned.
