The Delights of Chalkida (Shrimp Spaghetti) 🦐🦐

Pour enough olive oil into the pot to cover the bottom. Add the finely chopped onion and sauté for 5 minutes. Add the fresh shrimp and cook for 7 to 10 minutes. Deglaze with the ouzo.

Meanwhile, cook the spaghetti slightly less than the package instructions. Set aside without draining the water.

Remove the shrimp from the pot and set them aside in a bowl.

Add the tomatoes to the pot (with the oil and onion, without the shrimp), the sugar, salt, and pepper, and finally the basil. Let it simmer until it thickens into a nice sauce, about 20 minutes.

Add the cooked spaghetti and shrimp to the pot and stir. Add some of the reserved spaghetti water with a ladle, as needed. Let it cook for a total of 3 to 4 minutes, no more, to avoid overcooking.

Serve with plenty of parsley or basil, whichever you prefer, as both herbs complement the dish well. Enjoy from the crazy waters...!!!❤❤❤
