Besan is a traditional Gujarati dish that can be replaced by a sabzi. It is not fancy, but very delicious and satisfying. It proves to be a blessing when you have no vegetables in house and also when you have little time to cook. In old days this dish was cooked specially when they had unannounced guests. It was also popular due to it's cost-effectiveness. A little amount of chana flour can feed the entire family.
Today I was feeling lazy to cut/chop and cook. So I made this. We got to sit for dinner in less than 30 minutes after I entered the kitchen.

Ingredients

3 people
  • 3/4 cupchana flour
  • 10(+/-) green chillies (depending on the spiciness of chillies)
  • 20 clovesgarlic
  • 3 tbspoil
  • 1 tspmustard seeds
  • 1/4 tspasafoetida powder
  • 2 tsp(+/-) salt
  • 2 tbspCorriendar leaves
  • 450-500 mlwater

    In a thick bottom kadhai, take chana flour and roast it on very low flame, while stirring continuously for about 3-5 min or until the flour releases it's aroma and doesn't stick on the spetula anymore. Transfer it in a bowl. Take about 200 ml water and add a little at a time in chana flour to make smooth lump-free slurry.

    Make rough paste of chilli garlic in a chilli cutter. Heat oil in the same thick bottom kadhai. Crackle mustard, add asafoetida followed by chilli garlic and salt. Fry for a minute or two. Add the remaining water.

    Bring water to bubble boil. Adjust seasoning. Then add the chana flour slurry and stir continuously till it thickens to your desired consistency and till the rawness of flour is gone and the spices are blended well.

    Garnish with chopped coriander and serve immediately with Bhakhri stir fried with oil. SINCE THIS DISH HAS NO OTHER SPICES, IT MUST HAVE THE PROMINENT TASTE OF CHILLIES AND GARLIC.
