This is a basic Gujarati sabji which is made quickly by ingredients easily available at home. Tasty too.

In a small pressure cooker heat oil. Add mustard seeds, cumin seeds and carrom seeds. When crackles add asafoetida. Add chopped tomato and saute for sometimes.

Add approximate 1 cup water. Add salt, turmeric powder, red chilli powder, dhania jeera powder and jaggery. Mix well. When water comes to boil add cubed potatoes and brinjals.

Close the lid and cook until 4-5 whistles. Cool down for sometime. Release pressure and open cooker. Transfer sabji into bowl. Add chopped coriander leaves. Serve with bhakhri or paratha. You can serve with Khichdi also.
