Cut the tortillas into very thin strips and fry them in enough oil until crispy.

In a bowl, add the evaporated milk, crumble in the cheese, add the 5 eggs, and beat until well combined. Season with salt and pepper.

Once the tortilla strips are golden and crispy, drain the excess oil and pour in the egg mixture. Let it cook, then flip to cook the other side. Serve hot, and you can top with sour cream, more cheese, pickled jalapeños, or ketchup. This is a delicious meal for the whole family.
