Ingredients

  1. 1 1/2 cupshulled pumpkin seeds (about 180 grams)
  2. 1/2 cuppeanuts (about 70 grams)
  3. 8 1/2 cupschicken or vegetable broth (2 liters)
  4. 14 ouncestomatillos (about 400 grams)
  5. 4serrano peppers
  6. 1/4onion
  7. 2 clovesgarlic
  8. 4 sprigscilantro
  9. 2 sprigsepazote
  10. 3lettuce leaves
  11. 6spinach leaves
  12. 6radish leaves or 1 hoja santa leaf
  13. 3 tablespoonslard or oil of your choice
  14. Salt, to taste
  15. Black pepper, to taste
  16. Tortillas, as needed, for serving
  17. Cooked beans or rice, as needed, for serving

    Set aside the oil and broth. Toast the following ingredients: pumpkin seeds, peanuts, onion, garlic, serrano peppers, and tomatillos.

    Grind the seeds and peanuts dry in two batches (so you don't overload the blender). Blend this mixture with 4 1/4 cups (1 liter) of broth.

    In a separate batch, blend the other toasted ingredients—onion, garlic, tomatillos, and peppers—with 4 1/4 cups (1 liter) of chicken broth. Add the cilantro, epazote, lettuce, spinach, and radish leaves (or hoja santa) to the blender.

    In a pot over medium heat, add the lard (or oil) and pour in both mixtures. Add salt and pepper. Cook for 20 minutes, stirring constantly.

    Serve with your choice of meat or vegetables, and accompany with beans, rice, and tortillas. Enjoy!
