As with other pastas I've made, mix the ingredients and your dough is ready. Some people let it rest for about 20 minutes... Personally, I've done it both ways and there's not much difference.

Now you need a lot of time to form the pepitas for soup... Make a tiny ball with your index finger and thumb. Then press a little and shape it with your fingers into a pepita (like melon seeds). I used them in a soup recipe that I'll post next week. But you can use them for any soup you like.
