Ingredients

30 mins
  1. Kaffir leaves/Curry-leaves
  2. Onion
  3. Green chillies
  4. Coriander
  5. Garlic, Ginger
  6. Broccoli/zucchini/eggplant/carrots
  7. (Dhania powder + garam masala) / Thai curry paste
  8. Coconut milk
  9. (optional) Tofu, peanuts

Cooking Instructions

30 mins
  1. 1

    In a big pot pour some oil. Add lots of Kaffir leaves/Curry-leaves, Green chilies, crushed ginger, garlic, onions and fry for a while. Add chopped coriander.

    (Optional) Fry tofu on side.

  3. 3

    Add all veggies and let it cook. Add salt and some pepper.

  4. 4

    (Option 1) Add dhania powder and some garam masala. OR (Option 2) Add readymade thai curry paste.

  5. 5

    Add Coconut milk. Add Tofu, peanuts.

  6. 6

    Let it boil. Then serve with rice.
