The Vietnamese Pho Ga a.k.a Chicken Noodle Soup is definitely one of the heartiest and homeliest that I've ever had. If you have been to Vietnam, you would no doubt have tried it or at least seen it before. If not, the whole Vietnam experience isn't complete, and you'll have to go back again. #newcookschallenge

Ingredients

  1. Meat
  2. 500 gChicken Thigh (On the Bone)
  3. Chicken Breast Boneless (Optional)
  4. Broth
  5. 1Knotted Chicken Stock Pod
  6. 4 CupsWater
  7. 5TBPS Fish Sauce
  8. 1/2TPS Sugar
  9. 2TBPS Salt
  10. 1Onion
  11. 2 InchesGinger
  12. 2 BunchesSpring Onions
  13. 3 PodsStar Anise
  14. 3Cloves
  15. 1TBPS Black Pepper Corn
  16. 2TBPS Coriander Seeds
  17. 1 HandfulCoriander
  18. Noodles
  19. 1 PacketPho Rice Noodles
  20. Garnish
  21. 3-4Thai Basil
  22. 1Lime
  23. Bean Sprouts
  24. Coriander
  25. Spring Onions
  26. Mint
  27. Birds Eye Chilli

Cooking Instructions

    Soak in hot water for 20 - 25 mins until soft

    Drain and soak in cold water after

  3. 3

    Cook soaked noodles in a separate pot for 1 - 2 minutes once the broth is ready

  4. 4

    Roast or Char whole onion over an open fire on a stove & set aside

  5. 5

    Slice and smash 2 inches of ginger

  6. 6

    Cut 2 bunches of green onions in half and smash the ends.

  7. 7

    Pan toast star anise, cloves, black peppercorns & coriander seed till it’s fragrant.

    Add cut ginger, spring onions & coriander into the pan to fry.

    Put all toasted ingredients into a soup bag and place them into a soup pot.

    Add water, chicken stock, fish sauce, sugar, salt.

    Once boiling, add chicken in for 10 - 15 minutes

    Remove chicken from the broth after 10 - 15 mins. Shred meat off and set meat aside.

    Put bones & spare parts back into the pot to continue simmer for better broth

    Taste as it goes, feel free to add more fish sauce or salt for more taste.

    Put bean sprouts at the bottom of a serving bowl

    Put cooked noodles on top of the bean sprouts

    Lay meat on top

    Add broth in

    Lay spring onions, Thai basil, mint & coriander on top

    Squeeze a wedge of lime

  21. 21

    On a separate condiment saucer, dice chilli up and add fish sauce
