Place the ribs in a pot with enough water to cover the meat, add a pinch of salt, cover, and let it boil until the meat is tender and the water reduces slightly.

Meanwhile, toast, clean, and slice the poblano peppers, then set aside.

Wash and cut the potatoes into medium cubes and set aside.

For the sauce, boil the tomatoes for about 5 minutes. Add them to a blender with the garlic and onion.

When the meat is halfway cooked, add the potatoes and the 2 tablespoons of lard, cover, and stir occasionally.

Once the potatoes are halfway cooked, add the sliced peppers and stir to combine all the flavors and lightly brown the ingredients. At this point, your kitchen will smell so good it'll make your mouth water.

Once the ingredients are slightly cooked and infused with the lard, add the tomato mixture and stir to season everything for about 5 minutes. Finally, add the water and let it boil for a moment, and this delicious dish is ready.
