Ingredients

30 minutes
4 pax
  1. 20-30 piecesmatoke pre boiled
  2. 8-10 piecespotatoes pre boiled
  3. Halfa kg matumbo well cooked
  4. 2 cupsdiced Carrots
  5. 3tomatoes peeled and diced
  6. 2big onions diced
  7. Green, yellow and red bell peppers diced
  8. 2 bunchesfresh dhania shredded
  9. to tasteSalt
  10. Black pepper

Cooking Instructions

30 minutes
  1. 1

    In a pot, cook the onions and bell peppers until tender.

    Add the diced carrots, mix and cover for a few minutes to cook the carrots.

    Add the diced tomatoes and cook for a few minutes.

  4. 4

    Add in salt and black pepper and stir, allow to cook for a few minutes.

    Add in the cooked matumbo, thoroughly mix with the vegetables, cover and allow a few minutes to cook.

    Add in the matoke and potatoes, gently mix in with the vegetables and matumbo.

  7. 7

    Simmer for a few minutes, finish with fresh dhania and serve hot. Enjoy!
