Kutluma or 'KATLAMA’ is a Pakistani savory, similar to a spicy pizza. It is served around the world in top Pakistani restaurants. It is made with dough mixed with chili powder, garam masala and red food coloring. Small balls of this dough are sprinkled with mash dal (washed urad dal), coriander and rolled out and then deep fried in oil. Sometimes, the Katlama before frying is also covered with chickpea flour paste called 'besan' in Urdu.

Ingredients

  • 🌻For Dough:
  • 2 cupsAll purpose flour
  • 1 Tbspoil
  • water as needed to make the dough
  • 🌻For the Paste:
  • 1 cupgram flour
  • 1/4 tspred food colour
  • 1 tspsalt
  • 2 tspred chilli powder
  • 1egg
  • water to make paste if required
  • 🌻For the Topping:
  • 2 TbspUrad daal (mash daal)washed & socked 2 hour & drain
  • 1 Tbspcumin seeds
  • 1 Tbspcoriander seeds
  • 1/2 tspred chilli flakes
  • 2/3green chilli chopped (optional)

Steps

  1. 1

    In bowl,add all-purpose flour,salt and oil.
    Gradually add water and knead well to form a dough,cover & let it rest for 30 minutes.

    In bowl,add gram flour,red chili powder,cumin seeds,coriander seeds,salt,red food color and egg mix well.
    Gradually add water if required and mix well to make a thick paste.

    Grease your hands with oil and knead dough again,take a small dough,make a ball and roll out dough with the help of rolling pin make a chapatti as your desired shape.

  4. 4

    Spread prepared paste,sprinkle dried seeds and green chilli and mash daal press gently with hand or back of spoon.
    In wok,heat oil and fry katlama until nice and light crispy.
    Serve hot with green raita.
    Enjoy !

    If you are Vegan or Vegetarian so skip the egg and make a paste with little water.
