Ingredients

2 servings
  • 1fillet fresh cod or haddock, 12 oz. (about 340 g), cut into strips
  • Salt and pepper to taste
  • Oil for frying
  • beer batter
  • 3/4 cupall-purpose flour (about 90 g)
  • 3/4 cupcornstarch (about 90 g)
  • 1/2 teaspoonpaprika
  • 1/2 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • 1very cold beer
  • thai-style cabbage salad
  • 3 cupsshredded red cabbage (about 210 g)
  • 2carrots, grated or julienned
  • 1/2 teaspoonchopped fresh mint
  • 1 tablespoonthinly sliced fresh basil
  • 1 tablespoonchopped fresh cilantro
  • 1 1/2 teaspoonssesame oil
  • 1 1/2 tablespoonslime or lemon juice
  • 3/4 tablespoonThai fish sauce
  • 1/2 teaspoonhoney
  • 1 teaspoonfinely minced ginger
  • 1 tablespoontoasted sesame seeds
  • 1green onion, thinly sliced on the diagonal

Steps

  1. 1

    Season the fish strips with salt and pepper to taste.

  2. 2

    Lightly dust the fish strips with a little cornstarch.

  3. 3

    In a mixing bowl, combine all the beer batter ingredients.

  4. 4

    Dip the fish strips in the batter and fry them.

  5. 5

    Serve with the Thai-style cabbage salad.

  6. 6

    THAI-STYLE CABBAGE SALAD
    In a bowl, whisk together the sesame oil, lime or lemon juice, fish sauce, honey, and ginger.

  7. 7

    In a salad bowl, combine the cabbage, carrots, mint, and cilantro. Toss well with the dressing. Transfer the salad to a serving dish and garnish with sesame seeds, cilantro, and green onion.

  8. 8

    Serve with the fried fish.
