Ratatouille
Delicious, flavorful, and healthy recipe made with fresh vegetables.

Thinly slice the onion and set aside.

Slice the bell peppers into strips.

Heat olive oil in a skillet and sauté the onion and bell peppers. Add salt.

Meanwhile, cut the eggplant, zucchini, and tomatoes into pieces, and finely mince the garlic clove.

Add everything to the skillet. Add Tabasco sauce if desired, season with salt, and stir.

Add the thyme sprigs and bay leaves. Simmer for 30 to 40 minutes, stirring occasionally.

Add pepper and taste to adjust the seasoning if needed.
