Chicken Tikka Masala (boneless)

This dish has a variety of recipes, but this one is my favourite recipe for Chicken Tikka Masala.. It’s rich texture and the aroma of all the spices makes it so special. You can either have it with garlic naan, chapati or boiled rice.. We used to visit this Restaurant in Kuwait where in dinner we could have Poori as well. And we always loved to have Poori in our main course, specially with kabab or Chicken Handi.
Chicken Tikka Masala (boneless)

Cooking Instructions

In a big mixing bowl add the chicken chunks with all the spices and yogurt.

Mix nicely, cover with cling wrap and refrigerate at least for 1 hour or overnight.

In a chopper, finely chop the onion and keep aside. Make tomato purée and keep aside.

Now remove the marinated chicken and give a mix. And in a non-stick pan/wok, add 4-5 tbsp oil and add these chunks one by one. Do not over fill the pan, otherwise the chicken will leave it’s waters. Remove in a bowl when done. And repeat the step for the remaining chicken. (keep the flame on medium high)

In another non-stick wok add oil, ginger garlic crushed and sauté for 30 seconds. Then add the chopped onions. Sauté till translucent.

Now add the tomatoes purée and all the spices. Mix well and cook for 2 minutes.

Move away from flame, give a minute’s rest and then add yogurt and cream. Mix well. (I added turmeric powder as I forgot to add it before)

Add chicken tikka chunks and mix. Add butter and let it cook for 5 mins.

Serve with Garlic Naan or Puri and enjoy your meal.

The first time I tried Chicken Tikka Masala was at a friend's house. Her mother had graciously invited me over for lunch. From the very first bite of her delicious dish I was in love. It was creamy and spicy and filled with chunks of marinated chicken. She showed me her spice pantry... Which could rival any spice merchant. She scooped kashmiri pepper powder out of a big container and into a large jar as well as another jar full of her own special garam masala blend and shared her recipe. I wanted tikka masala, but I also wanted to try something new. I had never heard of anyone making shrimp masala (I'm sure it's gotta be some sort of faux pas and I'm sure someone else must have made this sometime, but I don't care! Lol). The basis for this recipe is my go-to chicken tikka masala recipe that I have used for years. The original recipe called for heavy cream. I have switched to coconut milk in this dish for a more traditional approach, and it provides a dairy free dish. Coconut milk, however, is not quite as healthy as it is touted to be. With 12g of saturated fat (the bad fat) per 1/3 cup serving you are still in the same range as heavy cream once distributed into a dish. It's still fewer calories and fat, but not by much. As always, all things in moderation my dears! As much as we love it, I only make this about twice a year. I am going to begin toying with other substitutes for low fat options. StephieCanCook -
