Ingredients

Serves 4 servings
  1. Leavesfrom 1 bunch of celery with about 1 inch of stalks
  2. 1 lb (2 oz)carrots (500 grams)
  3. 1 teaspoonground cumin
  4. 1 teaspoonground turmeric
  5. 1 teaspooncouscous spice blend
  6. 1onion
  7. 2 clovesgarlic
  8. 1 teaspoonsea salt with seaweed (homemade for me)
  9. Black pepper
  10. 1 teaspoondried tarragon
  11. 2 tablespoonsunsalted butter (30 grams)

Steps

25 minutes
  1. 1

    Wash the celery, cut the stalks into pieces, and chop the leaves. Peel the carrots and slice them into rounds. Peel the onion and cut it into 6 pieces. Peel the garlic cloves. Place the vegetables, garlic, and onion in a large pot. Add the cumin, turmeric, couscous spice blend, and sea salt. Season with black pepper.

    Add enough water to cover the vegetables. Stir, bring to a boil, then reduce to medium-low heat and simmer for 25 minutes.

    Blend the soup with an immersion blender. Add the butter and stir until melted.

    Sprinkle with tarragon. It's ready to serve! Enjoy!
