Simmer ham in water w veg's and spices 2.5 hrs

Simmer the glaze

Score fat on ham and studs w cloves, pour on a bit of glaze

Roast 15 min, reglaze

Roast 35 mins

Cook chopped onion and grated ginger in olive oil without coloring then add cinnamon, cayenne, and nutmeg and roast lightly.

Add sugar and cook until it dissolves

Add vinegar and cook to a syrup

Add apples, pairs, sultanas, saffron and zest and juice of oranges, and cook to desired texture

Add tomatoes. Cook to desired stage

Add tomatoes and cook a bit.

Couldn’t find raw ham so I bought one of those smoked hams and did two things to it: cut it like a hassleback potato and then again down the middle to ensure maximum sauciness. Then, I slathered it in what we will generously call a “mustard bath”, and basted it in those delicious juices while it cooked.The leftover ham is going in a soup with white beans or maybe lentils, hash browns with sautéed onions and bell peppers, ham sandwiches with a thick chutney...that’s why I’m listing this as a serving for 2.
