Nasi Lemak Sambal
This sauce goes well with nasi lemak.
Steps

Deep fried half bowl of anchovies, set aside and keep the oil for later.

Blend shallots, chili, garlic, galangal, sugar into paste.

In a big pot, add cooking oil on heat 3. and then add the paste after

Stir and mix. Cook for about 10 mins or so. Add pandan leaves (optional)

Mix and add the rest of anchovies into the pot. cook and stir for 5 mins.

Add stock cube (optional) and 1 tsp of salt to taste. cook for a min.

Add onions in.

Add the anchovies oil in if the sauce is too dry.

Serve.
