Ingredients

  • 12dried red chillies (soaked and deseeded)
  • 6red shallots
  • 6garlic gloves
  • 1small bowl of Anchovies (fried)
  • 1/2 tspsalt
  • 1 inchgalangal
  • 1/2small block of gula melaka (or 1 tbsp sugar)
  • 1/4 cupcooking oil
  • Seafood stock cube (optional)
  • 1 tsptamarind paste (optional)
  • 2pandan leaves (optional)
  • 1/2onion (thinly sliced, optional)

Steps

  1. 1

    Deep fried half bowl of anchovies, set aside and keep the oil for later.

  2. 2

    Blend shallots, chili, garlic, galangal, sugar into paste.

  3. 3

    In a big pot, add cooking oil on heat 3. and then add the paste after

  4. 4

    Stir and mix. Cook for about 10 mins or so. Add pandan leaves (optional)

  5. 5

    Mix and add the rest of anchovies into the pot. cook and stir for 5 mins.

  6. 6

    Add stock cube (optional) and 1 tsp of salt to taste. cook for a min.

  7. 7

    Add onions in.

  8. 8

    Add the anchovies oil in if the sauce is too dry.

  9. 9

    Serve.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
