Cut brinjal into pieces.

Heat pan. Pour sesame oil. Put the brinjal pieces and cover them with a lid. Cook the brinjal in low flame.

When the brinjal is soft-cooked remove it from the pan. let it cool down.

Peel off the skin and keep it aside. Now chop onions big, slit green chilies.

Again pour oil into the same pan. Put asafoetida, curry leaves, red chili, green chilies, and fry onions.

Add salt, tamarind, and coconut. Mix well. finally, add brinjal and turn off the flame.

Transfer this to a mixer jar add required water and grind.

Brinjal chutney is ready to enjoy with dosa.
