Bread pudding

Credit for this goes to my dear mother. In my childhood, unlike today almost every breakfast, lunch and dinner was cooked by our mothers, Without ever a hint of tiredness. These were always made from readily available items at home,since there was no stuff like pastry in those times so, Mum would make pudding. Hats off to all our mothers.

These are the pau or bread which shall be used for bread pudding.

They are called ladi pau in Mumbai.

Soak them in a big bowl with water and remove them immediately squeezing out the water.

Keep the squeezed out pau in a big bowl. To this add the milk, sugar, ghee, vanilla essence and raisins and break the eggs and add to it and mix lightly.

Spare 2 tsp of sugar for caramelization.

Take a steel vessel and keep it for heating on the gas. To it, add the 2 tsp of sugar for caramelization.

When the sugar starts caramelizing it will look something like this.

To this caramel add the bread pudding mixture which you have kept aside. Pour it gently.

Remove this pudding mix aside and keep.

Meanwhile, heat a pressure cooker to it add a cup of water. When the water starts boiling. Keep the pudding mix in the cooker.

And close the lid of the cooker. Do not place a whistle let the steam come out.

Pressure cook for at least 10 minutes or so. Switch off the gas. Take care do not remove the lid of the pressure cooker immediately.

When the pressure has subsided. Open the lid of the pressure cooker and put a knife in the pudding. If it comes out clean. It means pudding is steamed properly.

Have it either warm, cold, or room temp with a cup of cold milk.
