Jaggery and carrot rice
Steps

Wash and Soak rice in water for 10 minutes. Add rice and water in Pressure cooker and cook till 2 whistles and release the pressure.

Peel wash and grate carrots. Collect all ingredients. Chop jaggery in small pieces.

Heat ghee in a wok. Add grated carrots and cook for 2 minutes. Add jaggery and cook on low flame till jaggery melts.

Add melon seeds, raisins, pistachio, dessicated coconut and toss well. Add rice and mix. Cover the lid and cook for 2 minutes. Again stir it well and switch off the flame.

Serve hot garnished with raisins as dessert.
